Ingredients
- 2.5–3 inches fresh ginger (unpeeled)

Instructions
- Slice the unpeeled ginger into rounds about 4-5 millimeters thick.
- In a medium-sized saucepan, combine sliced ginger, water, and monk fruit sweetener. Heat over medium heat while stirring occasionally.
- Once it starts to simmer, reduce heat to low. Cover and let infuse for 10-15 minutes.
- After simmering, let it steep covered for an additional 15-30 minutes for stronger flavor.
- Remove ginger slices from the liquid, add freshly squeezed lemon juice, and stir gently.
- Chill in the refrigerator for at least one hour before serving over ice.
