Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Grate the zucchini using a box grater or food processor.
- Add the grated zucchini directly into the heated skillet and stir occasionally until it begins to wilt.
- Incorporate smashed garlic cloves and thyme sprigs, seasoning with salt.
- Cook down the mixture for 20 to 45 minutes until it reaches a jam-like consistency, stirring frequently.
- Discard thyme stems and mash any whole garlic into the mixture.
- Stir in additional olive oil, lemon juice, and adjust the seasoning if needed.
- Serve at room temperature or store in an airtight container.
