- 1 cup bell peppers, diced (mixed colors)
- 1 medium yellow onion, diced
- 1 can (15 oz) black beans, rinsed
- 1 cup cherry tomatoes, halved
- 1 cup shredded lettuce (romaine or iceberg)
- 1 ripe avocado, sliced
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream or Greek yogurt
Instructions
- 1. Cook the beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- 2. Spice it up: Add taco seasoning and half a cup of water to the skillet. Simmer until thickened, about 5 minutes.
- 3. Sauté veggies: In another skillet, heat oil and sauté diced onions and bell peppers until tender.
- 4. Assemble: Layer seasoned beef in bowls and top with black beans, sautéed veggies, tomatoes, lettuce, and avocado.
- 5. Add toppings: Finish with dollops of sour cream or Greek yogurt and sprinkle with cilantro.
