  • 1 Tablespoon instant espresso or coffee
  • 12 oz. white chocolate (for ganache)
  • 6 oz. heavy cream (for ganache)
  • 2 sticks unsalted butter, softened (for frosting)
  • 16 oz. cream cheese, softened (for frosting)
  • 1 Tablespoon espresso granules dissolved in 2 teaspoons vanilla extract (for frosting)
  • 6 to 6 1/2 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 325°F (165°C). Grease three 8-inch round cake pans and dust with flour.
  2. Warm the milk gently and melt the chopped white chocolate in it. Let cool slightly.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. Beat softened butter until creamy, then gradually add sugar. Mix until fluffy.
  5. Add eggs one at a time, mixing well after each addition followed by the vanilla.
  6. Alternately mix in flour mixture and chocolate mixture until just combined.
  7. Divide batter into prepared pans and bake for about 22-25 minutes or until a toothpick comes out clean. Cool before removing from pans.
