- 4 ounces white baking chocolate
- 2 1/2 cups cake flour

- 1 1/3 cup milk
- 1 Tablespoon instant espresso or coffee
- 12 oz. white chocolate (for ganache)
- 6 oz. heavy cream (for ganache)
- 2 sticks unsalted butter, softened (for frosting)
- 16 oz. cream cheese, softened (for frosting)
- 1 Tablespoon espresso granules dissolved in 2 teaspoons vanilla extract (for frosting)
- 6 to 6 1/2 cups powdered sugar (for frosting)
Instructions
- Preheat oven to 325°F (165°C). Grease three 8-inch round cake pans and dust with flour.
- Warm the milk gently and melt the chopped white chocolate in it. Let cool slightly.
- In a bowl, whisk together flour, baking powder, and salt.
- Beat softened butter until creamy, then gradually add sugar. Mix until fluffy.
- Add eggs one at a time, mixing well after each addition followed by the vanilla.
- Alternately mix in flour mixture and chocolate mixture until just combined.
- Divide batter into prepared pans and bake for about 22-25 minutes or until a toothpick comes out clean. Cool before removing from pans.
