Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix apricots, lemon zest, cornflour, ginger powder, cinnamon powder, and honey until well combined.
- In another bowl, combine rolled oats, flour, ground cinnamon, and salt. Add chilled butter and mix until crumbly.
- Pour apricot filling into a baking dish and top with the oat mixture.
- Bake for about 30 minutes until the topping is golden brown and the filling bubbles.
