Instructions
- In a large mixing bowl, combine the shredded cabbage, grated carrot, and sliced onion.
- In a small mixing bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, celery seed, salt, and black pepper until well blended.
- Pour half of the dressing over the vegetable mixture and toss gently. Add more dressing as desired for taste and consistency.
- Transfer to a serving dish and garnish with chopped fresh parsley if desired.
