- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 2 cups fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons cornstarch
- 2 tablespoons soy sauce or tamari
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup
- 2 tablespoons neutral oil for cooking
- Green onions and sesame seeds for garnish
Instructions
- Press the tofu between clean towels for 15 minutes to remove excess moisture.
- Cut tofu into 1-inch cubes and coat with cornstarch until evenly covered.
- Heat oil in a non-stick skillet over medium-high heat; cook tofu in a single layer until golden brown on both sides (about 6-8 minutes total). Remove from skillet.
- In the same skillet, sauté sliced peppers and onion for about 5 minutes until caramelized; add minced garlic and ginger, stirring for 30 seconds.
- Toss in pineapple chunks and let them caramelize for 2-3 minutes.
- Mix soy sauce, rice vinegar, and maple syrup together; pour over the mixture in the skillet along with the crispy tofu. Stir gently for 2 minutes until glossy.
