  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press the tofu between clean towels for 15 minutes to remove excess moisture.
  2. Cut tofu into 1-inch cubes and coat with cornstarch until evenly covered.
  3. Heat oil in a non-stick skillet over medium-high heat; cook tofu in a single layer until golden brown on both sides (about 6-8 minutes total). Remove from skillet.
  4. In the same skillet, sauté sliced peppers and onion for about 5 minutes until caramelized; add minced garlic and ginger, stirring for 30 seconds.
  5. Toss in pineapple chunks and let them caramelize for 2-3 minutes.
  6. Mix soy sauce, rice vinegar, and maple syrup together; pour over the mixture in the skillet along with the crispy tofu. Stir gently for 2 minutes until glossy.
