- 1 box Chocolate Cake mix + box ingredients
- 1 cup softened plant-based Butter
- 1 1/2 cup Powdered Sugar
- 7 oz vegan marshmallows Creme
- 1/2 tsp Vanilla extract
- Chocolate Chips or Gray/Black round cake decorations
Instructions
- Prepare the chocolate cake mix according to the package directions and allow the cupcakes to cool completely on a wire rack.
- In a mixing bowl, cream together softened plant-based butter and vanilla using an electric mixer until light and fluffy. Gradually add powdered sugar until fully incorporated. Fold in the vegan marshmallows creme gently.
- Transfer the frosting to a piping bag fitted with a round tip and frost each cupcake generously.
- Decorate with mini chocolate chips for eyes and additional chocolate chips or gray/black decorations for mouths.
- Refrigerate decorated cupcakes until ready to serve.
