- 2 eggs
- 1 cup sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine eggs and oil until blended. Add pumpkin puree and stir in sugar.
- In another bowl, whisk together flour, vanilla pudding mix, baking powder, pumpkin spice, and baking soda.
- Gradually add dry ingredients to wet ingredients; stir until just combined.
- Spray a loaf pan with oil and pour in the batter.
- Bake for about 60 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 15-30 minutes before slicing.
