Instructions

  1. In a heavy-bottomed saucepan, combine sugar, evaporated milk, and cubed butter. Cook over medium heat, stirring constantly until the sugar dissolves and the mixture reaches a boil.
  2. Without stirring, continue boiling until the mixture reaches 245°F (118°C) on a candy thermometer.
  3. Remove from heat and stir in vanilla chocolate chips until melted and smooth.
  4. Add vegan marshmallow crème and vanilla extract, mixing well.
  5. Stir in chopped pecans to coat evenly.
  6. Drop by rounded tablespoons onto a parchment-lined baking sheet.
  7. Allow to cool completely before serving.
