Instructions
- In a heavy-bottomed saucepan, combine sugar, evaporated milk, and cubed butter. Cook over medium heat, stirring constantly until the sugar dissolves and the mixture reaches a boil.
- Without stirring, continue boiling until the mixture reaches 245°F (118°C) on a candy thermometer.
- Remove from heat and stir in vanilla chocolate chips until melted and smooth.
- Add vegan marshmallow crème and vanilla extract, mixing well.
- Stir in chopped pecans to coat evenly.
- Drop by rounded tablespoons onto a parchment-lined baking sheet.
- Allow to cool completely before serving.
