Instructions
- In a medium mixing bowl, whisk together the peanut butter, water, soy sauce, lime juice, honey, sesame oil, ginger, and garlic powder until smooth.
- Chop all salad ingredients into bite-sized pieces.
- In a large salad bowl, combine the coleslaw mix, shredded chicken, scallions, red bell pepper, peanuts, and optional herbs.
- Pour the peanut dressing over the salad and toss until evenly coated.
- Season with salt and pepper to taste before serving.
