Instructions
- Blend watermelon cubes in a high-speed blender until smooth.
- Strain the mixture through a fine mesh strainer into a bowl.
- In a saucepan, combine 1 ½ cups of strained watermelon juice with lemon juice, gelatin powder, and honey.
- Heat gently over medium-low heat for 3-4 minutes while stirring until dissolved.
- Pour the mixture into silicone molds and refrigerate for at least one hour to set.
- Once set, toss gummies in a sugar and citric acid mix for added sweetness.
