  • Handfuls of blueberries

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Roll out puff pastry into a rectangle and place it on parchment paper-lined baking sheet.
  3. Shape edges by bending them over and press down to form a border.
  4. Create an egg wash with the egg yolk and brush it on the edges.
  5. Puncture dough with a fork to allow steam escape and keep it flat.
  6. Bake with weights (e.g., beans) for about 20 minutes until golden brown.
  7. Cool crust on wire rack.
  8. Whisk cream cheese, lime juice, and sugar until smooth.
  9. Spread cream cheese mixture evenly over cooled crust.
  10. Layer sliced peaches and berries on top.
  11. Garnish with fresh mint leaves.
