Instructions
- Preheat your oven to 350°F (180°C).
- Roll out puff pastry into a rectangle and place it on parchment paper-lined baking sheet.
- Shape edges by bending them over and press down to form a border.
- Create an egg wash with the egg yolk and brush it on the edges.
- Puncture dough with a fork to allow steam escape and keep it flat.
- Bake with weights (e.g., beans) for about 20 minutes until golden brown.
- Cool crust on wire rack.
- Whisk cream cheese, lime juice, and sugar until smooth.
- Spread cream cheese mixture evenly over cooled crust.
- Layer sliced peaches and berries on top.
- Garnish with fresh mint leaves.
