- 15.25 ounces white cake mix
- 0.3 ounces sugar-free strawberry Jell-O (1 package)
- 4 egg whites
- ⅓ cup canola oil
- 1 cup frozen unsweetened strawberries (thawed)
- ½ cup water
- ⅓ cup butter (softened)
- 2 ⅓ cups powdered sugar
Instructions
- Preheat oven to 350°F and grease two 9-inch round pans.
- In a large bowl, mix cake mix and strawberry Jell-O until combined. Add egg whites and canola oil; beat until smooth.
- Mash thawed strawberries in a small bowl, set aside some for frosting, then add remaining to batter along with water; mix well.
- Divide batter between prepared pans and bake for 20-25 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
- For frosting, combine softened butter with reserved strawberries, then gradually add powdered sugar until fluffy.
- Once cakes are cool, frost between layers and on top.
