- 2 cups uncooked rice
- 3 large chicken breasts, cut into bite-sized pieces
- 2 small heads of broccoli, chopped
- ½ cup soy sauce
- ½ cup honey
- ¼ cup rice vinegar
- 3 cloves garlic, minced
- 2 tbsp mayonnaise
- 2 tbsp Sriracha
- Sesame seeds for garnish
Instructions
- Prepare broccoli by washing and chopping into bite-sized pieces. Rinse the rice under cold water until clear.
- In a medium saucepan, cook the rice with water according to package instructions (about 18 minutes).
- Season chicken with olive oil, salt, pepper, and spices. Cook in an air fryer at 375°F (190°C) for 15–20 minutes until golden.
- For the sauce, whisk soy sauce, honey, rice vinegar, garlic, Sriracha, and sesame oil; simmer until thickened with arrowroot slurry.
- Combine cooked chicken in the sauce and toss well.
- Serve rice topped with broccoli and sticky chicken; drizzle spicy mayo on top and sprinkle with sesame seeds.
