  • 3 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Olive oil (for searing)

Instructions

  1. Sauté minced garlic in olive oil over medium heat until fragrant. Add fresh spinach and cook until wilted. Allow to cool slightly before chopping.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, salt, black pepper, egg, and prepared spinach. Mix gently to combine.
  3. Take a portion of the mixture, flatten it in your palm, place a cube of mozzarella in the center, and seal it to form a ball. Repeat until all mixture is used.
  4. Heat olive oil in a skillet over medium heat and sear each meatball for about 2–3 minutes on each side until golden brown.
  5. Finish cooking by covering the skillet for an additional 5–7 minutes on low heat or transfer to a preheated oven at 375°F (190°C) for about 10–12 minutes.
