  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • Marinara sauce
  • Cooked pasta or zucchini noodles, if desired

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion and red bell pepper for 5 minutes until soft; add garlic and cook until fragrant.
  3. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, eggs, tomato paste, sautéed vegetables, parsley, salt, and pepper until combined.
  4. On parchment paper, shape the meat mixture into an 8'x15' rectangle. Layer with deli chicken and basil leaves followed by mozzarella cheese.
  5. Roll the meatloaf using parchment paper as a guide; seal the edges.
  6. Place on a baking sheet lined with parchment paper and bake for 1 hour.
  7. Allow resting before slicing and serve over pasta or zucchini noodles topped with marinara sauce.
