Ingredients
- 1 1/2 – 2 lbs top sirloin steak
- 1 lb baby red potatoes
- 2 bell peppers (red, yellow, or orange)
- 1 large red onion
- 2 small or 1 large zucchini
- Marinade ingredients: olive oil, soy sauce, balsamic vinegar, lemon juice, brown sugar, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, paprika, pepper, basil, dill weed, oregano, rosemary
Instructions
- Whisk together marinade ingredients in a large bowl; set aside 1/3 cup.
- Add steak to remaining marinade; coat well and refrigerate for 2-6 hours.
- Microwave potatoes with water in a covered bowl for 4-5 minutes until tender; drain.
- Toss drained potatoes with peppers and reserved marinade; refrigerate.
- Soak wooden skewers in water if using; then thread steak and veggies onto skewers.
- Grill or bake until cooked through.
