  • 1 1/22 lbs top sirloin steak
  • 1 lb baby red potatoes
  • 2 bell peppers (red, yellow, or orange)
  • 1 large red onion
  • 2 small or 1 large zucchini
  • Marinade ingredients: olive oil, soy sauce, balsamic vinegar, lemon juice, brown sugar, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, paprika, pepper, basil, dill weed, oregano, rosemary

Instructions

  1. Whisk together marinade ingredients in a large bowl; set aside 1/3 cup.
  2. Add steak to remaining marinade; coat well and refrigerate for 2-6 hours.
  3. Microwave potatoes with water in a covered bowl for 4-5 minutes until tender; drain.
  4. Toss drained potatoes with peppers and reserved marinade; refrigerate.
  5. Soak wooden skewers in water if using; then thread steak and veggies onto skewers.
  6. Grill or bake until cooked through.
