Instructions
- Preheat your oven to 175°C (350°F). Grease and flour a springform pan.
- In a mixing bowl, beat eggs and sugar until frothy. Stir in coconut oil, pumpkin puree, vanilla extract, and maple syrup.
- In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually add to the wet mixture until just combined.
- Pour the batter into the prepared pan and bake for approximately 45 minutes or until a toothpick comes out clean.
- Let cool before glazing with a mixture of powdered sugar, milk, and maple syrup.
