- 2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
- In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well combined.
- Press half of the crumble mixture into the bottom of the prepared baking dish.
- In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
- Spread the pumpkin filling over the crust evenly and top with remaining crumble mixture. Add chopped walnuts on top if desired.
- Bake for 30–35 minutes or until golden brown and set. Allow to cool completely before slicing.
