  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until well combined.
  3. Press half of the crumble mixture into the bottom of the prepared baking dish.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Spread the pumpkin filling over the crust evenly and top with remaining crumble mixture. Add chopped walnuts on top if desired.
