  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine 1 cup plus 3 tablespoons of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of salt, ¾ cup of granulated sugar, 1 teaspoon of cinnamon, ½ teaspoon each of nutmeg and cloves.
  3. In a small mixing bowl, blend together ½ cup of pumpkin puree, ¼ cup of milk, ¼ cup melted butter or vegetable oil, and 1½ teaspoons of vanilla.
  4. Pour the wet mixture into the dry ingredients and stir until combined.
  5. Transfer the batter to an 8-inch casserole dish. In a separate bowl, mix together ½ cup granulated sugar, ½ cup brown sugar, and ¼ cup chopped pecans; sprinkle this topping over the batter.
  6. Carefully pour 1½ cups of very hot water over the entire mixture without stirring.
  7. Bake for about 40 minutes or until the center is set. Allow cooling for about 5–10 minutes before serving.
