Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch cake pan.
- In a bowl, whisk together flour, baking powder, salt, pumpkin pie spice, and sugar.
- In a separate bowl, combine pumpkin puree, oil, soy milk, and vanilla extract until smooth.
- Mix wet ingredients into dry ingredients gently until just combined.
- For the streusel topping, mix melted vegan butter with flour, brown sugar, cinnamon, and pumpkin pie spice until crumbly.
- Pour the batter into the prepared pan and top with streusel.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Cool before slicing; serve as is or drizzle with optional glaze made from powdered sugar and soy milk.
