- 2 cups granulated sugar
- 3/4 cup water
- 1/2 cup liquid glucose (light corn syrup)
- few drops black gel food coloring
- 6 Granny Smith apples (fresh and unwaxed)
Instructions
- Prepare your baking sheet by greasing parchment paper and placing it on a tray.
- Firmly insert bamboo skewers into each apple.
- In a saucepan, combine sugar, water, corn syrup, and black food coloring. Stir until the sugar dissolves, then stop stirring.
- Cook the mixture until it reaches the hard crack stage (150ºC/310ºF). Use a candy thermometer for accuracy or test by dropping some in ice-cold water.
- Dip each apple into the hot caramel, allowing excess to drip off before placing it on the prepared baking sheet.
- Let the dipped apples cool completely until the caramel hardens before serving.
