Instructions
- Gather all ingredients and slice the fresh pineapple into rounds.
- In a bowl, mix hoisin sauce, ginger, garlic, and Dijon mustard to create the marinade.
- Rub the marinade over the beef tenderloin and season with salt and pepper; marinate for at least 15 minutes.
- Broil the pineapple slices until caramelized (about 2–3 minutes per side).
- Cook the marinated beef tenderloin in a grill pan or under the broiler for about 20 minutes, until it reaches an internal temperature of 135°F for medium rare.
- Baste with a mixture of hoisin sauce, pineapple juice, ginger, and soy sauce during the last few minutes of cooking.
- Let the beef rest for five minutes before slicing; serve with grilled pineapple and garnish with parsley.
