Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, crush graham crackers and mix with toasted pecans, melted butter, sugar, and cinnamon. Press the mixture into muffin tin cups.
- Beat cream cheese until smooth; gradually add salt and sugar, mixing until fluffy. Add vanilla extract, eggs one at a time, and fold in sour cream.
- Pour filling over crusts and bake for about 18 minutes or until set but slightly jiggly.
- Cool at room temperature before refrigerating for at least two hours.
