- 1 cup packed brown sugar
- 1/2 cup evaporated milk
- 8 tablespoons unsalted butter (divided)
- 1/4 cup boiling water
- 1 1/2 cups toasted and coarsely chopped pecans
- 1 cup granulated sugar
Instructions
- Prepare your baking sheet by lining it with aluminum foil or a silicone mat.
- In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk. Stir until sugars dissolve completely.
- Insert a candy thermometer and cook while stirring occasionally until the mixture reaches 240°F (soft ball stage).
- Remove from heat and add cubes of unsalted butter on top without stirring; let sit for one minute.
- Mix in toasted pecans until combined and thickened.
- Quickly drop spoonfuls onto the prepared baking sheet before the mixture sets.
- Allow pralines to cool at room temperature for about 30 minutes until hardened.
