Instructions
- Soak wooden skewers in water for at least 30 minutes.
- In a bowl, whisk together lemon zest, lemon juice, olive oil, garlic, vinegar, parsley, salt, and pepper.
- Rinse shrimp; optionally remove shells but keep tails on.
- Thread 4-5 shrimp onto each skewer securely.
- Marinate skewers in the prepared marinade for 20-30 minutes.
- Preheat grill to medium-low heat.
- Grill skewers for about 3-4 minutes per side until shrimp are pink and opaque.
- Serve immediately; garnish with fresh parsley if desired.
