- 16 oz spicy chicken or turkey sausage
- 1 cup onion
- 5 cloves garlic
- 1 tbsp Italian seasoning
- 1 tsp paprika
- 1/4 tsp red pepper flakes
- 2 tbsp tomato paste
- 1 cup carrots
- 5 cups chicken broth
- 1.5 lbs red or yellow potatoes
- 2 cups spinach
- 1/2 cup heavy cream
- Fresh thyme or parsley for garnish
Instructions
- In a large pot over medium heat, cook crumbled sausage with chopped onion and minced garlic for about 7–10 minutes until browned. Drain excess fat, leaving about a tablespoon.
- Stir in Italian seasoning, paprika, red pepper flakes, and tomato paste; cook for another minute.
- Add chicken broth while scraping the pot's bottom to dissolve the tomato paste; bring to a boil.
- Add cubed potatoes and diced carrots; reduce heat to medium-low and simmer uncovered for 15–25 minutes until potatoes are fork-tender.
- Stir in fresh spinach and cook until wilted (about 2–3 minutes).
- Lower the heat further and gently stir in heavy cream without boiling. Adjust seasoning with salt and red pepper flakes as desired.
- Serve hot, garnished with fresh herbs and an extra pinch of red pepper flakes if you like it spicy.
