  • 5 cups chicken broth
  • 1.5 lbs red or yellow potatoes
  • 2 cups spinach
  • 1/2 cup heavy cream
  • Fresh thyme or parsley for garnish

Instructions

  1. In a large pot over medium heat, cook crumbled sausage with chopped onion and minced garlic for about 7–10 minutes until browned. Drain excess fat, leaving about a tablespoon.
  2. Stir in Italian seasoning, paprika, red pepper flakes, and tomato paste; cook for another minute.
  3. Add chicken broth while scraping the pot's bottom to dissolve the tomato paste; bring to a boil.
  4. Add cubed potatoes and diced carrots; reduce heat to medium-low and simmer uncovered for 15–25 minutes until potatoes are fork-tender.
  5. Stir in fresh spinach and cook until wilted (about 2–3 minutes).
  6. Lower the heat further and gently stir in heavy cream without boiling. Adjust seasoning with salt and red pepper flakes as desired.
  7. Serve hot, garnished with fresh herbs and an extra pinch of red pepper flakes if you like it spicy.
