- 1 lb chicken sausage
- 1/2 medium yellow onion, chopped
- 4 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef stock
- 1 cup water
- 10 sheets dry lasagna pasta, broken into pieces
- 1 to 2 tbsp fresh basil, torn
- Salt and pepper, to taste
- Ricotta cheese
- Grated parmesan cheese
- Shredded mozzarella cheese
Instructions
- In a large pot over medium heat, brown the chicken sausage while breaking it apart with a wooden spoon. Add chopped onion and minced garlic; sauté until the onion is translucent.
- Pour in crushed tomatoes, beef stock, and water. Stir to combine and sprinkle in Italian seasoning.
- Bring to a boil; add broken lasagna pasta. Reduce heat to medium-low and simmer for 15-20 minutes or until pasta is cooked through.
- Season with salt and pepper to taste; stir in fresh basil just before serving. Ladle into bowls and top with ricotta, parmesan, and mozzarella.
