Instructions
- Prepare Chicken: Pound each chicken breast to an even thickness between plastic wrap. Season with salt and pepper.
- Bread the Chicken: Set up three bowls: one with flour, another with beaten eggs, and the last with panko breadcrumbs. Coat each chicken cutlet in flour, dip in egg, then coat with breadcrumbs.
- Fry the Cutlets: Heat oil in a skillet to 325°F (163°C). Fry each cutlet for 2-3 minutes per side until golden brown. Drain on paper towels.
- Make Tomato Basil Topping: Sauté cherry tomatoes in olive oil until blistered; add garlic and salt. Deglaze with white wine, stir in basil, lemon juice, and zest.
- Serve: Arrange the fried cutlets on a plate, top with tomato mixture, pieces of burrata, and drizzle with balsamic glaze.
