- 1 cup unsweetened shredded coconut
- 1 cup full-fat coconut cream
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a standard loaf pan.
- In a mixing bowl, combine flour, baking powder, sugar, and salt.
- In another bowl, mix melted coconut oil, pineapple juice, crushed pineapple, and shredded coconut.
- Pour the wet mixture into the dry ingredients and gently fold until just combined.
- Transfer the batter to the prepared loaf pan and bake for 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
- While cooling, whip coconut cream until soft peaks form; gradually add powdered sugar until you reach your desired consistency.
- Once cooled completely, frost the bread generously.
