- 1 package (8 oz) phyllo dough
- 16 oz mixed mushrooms (cremini and shiitake), cleaned and sliced
- 2 cups fresh spinach, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 tbsp fresh thyme, chopped (or 1 tbsp dried)
- 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
- Add sliced mushrooms and spinach to the skillet; sauté until tender (approximately 8 minutes). Season with thyme, parsley, salt, and pepper.
- Lay out two sheets of phyllo dough on a clean surface, brushing each layer with olive oil. Spoon the mushroom mixture along the center and fold the sides over like wrapping a present.
- Transfer to a baking sheet lined with parchment paper. Brush the top with remaining olive oil. Bake for 25-30 minutes or until golden brown.
- Allow to cool slightly before slicing and serving warm.
