  • Total Time: 1 hour
  • Yield: Serves 6

Ingredients

Scale
  • 1 package (8 oz) phyllo dough
  • 16 oz mixed mushrooms (cremini and shiitake), cleaned and sliced
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp fresh thyme, chopped (or 1 tbsp dried)
  • 2 tbsp fresh parsley, chopped (or 1 tbsp dried)
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Add sliced mushrooms and spinach to the skillet; sauté until tender (approximately 8 minutes). Season with thyme, parsley, salt, and pepper.
  3. Lay out two sheets of phyllo dough on a clean surface, brushing each layer with olive oil. Spoon the mushroom mixture along the center and fold the sides over like wrapping a present.
  4. Transfer to a baking sheet lined with parchment paper. Brush the top with remaining olive oil. Bake for 25-30 minutes or until golden brown.
  5. Allow to cool slightly before slicing and serving warm.
