- 2 cups rolled oats
- 1 cup water
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1 cup diced bell peppers (any color)
- 1 cup fresh spinach (lightly sautéed)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a saucepan, bring water to a boil. Stir in rolled oats and simmer for about 5 minutes until thickened. Remove from heat and allow to cool slightly.
- In a bowl, beat the eggs, then mix in the cooled oatmeal. Season with salt and pepper.
- Spread the oatmeal mixture onto the baking sheet in pizza shapes, about half an inch thick. Bake for 15–20 minutes until golden brown.
- Remove from oven and top each crust with cheese, bell peppers, and sautéed spinach.
- Return to oven for another 10 minutes until the cheese is melted and bubbly. Cool for a minute, slice into wedges, and serve warm.
