  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup diced bell peppers (any color)
  • 1 cup fresh spinach (lightly sautéed)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, bring water to a boil. Stir in rolled oats and simmer for about 5 minutes until thickened. Remove from heat and allow to cool slightly.
  3. In a bowl, beat the eggs, then mix in the cooled oatmeal. Season with salt and pepper.
  4. Spread the oatmeal mixture onto the baking sheet in pizza shapes, about half an inch thick. Bake for 15–20 minutes until golden brown.
  5. Remove from oven and top each crust with cheese, bell peppers, and sautéed spinach.
  6. Return to oven for another 10 minutes until the cheese is melted and bubbly. Cool for a minute, slice into wedges, and serve warm.
