Instructions
- Wash lemons thoroughly, zest them carefully, and juice until you have about 1 cup of juice.
- In a medium saucepan over medium heat, combine water and sugar. Stir until dissolved to form a syrup.
- Add lemon juice and zest to the syrup; stir well.
- Gradually sprinkle in agar-agar while whisking continuously. Bring to a gentle boil for 2 minutes.
- Reduce heat and simmer for 10 minutes until the mixture thickens.
- Pour the jam into sterilized jars while warm, seal tightly, and cool completely before refrigerating.
