- 2 ripe peaches, halved and pitted
- 1 cup fresh blueberries
- 4 cups mixed greens (spinach, arugula, kale)
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey or maple syrup
- Salt & pepper to taste
Instructions
- Preheat your grill to medium heat (about 350°F/175°C) and lightly oil the grates with a paper towel.
- Toss peach halves in a bowl with olive oil, salt, and pepper.
- Grill peaches cut-side down for 4-5 minutes until tender with nice grill marks.
- In a large bowl, combine mixed greens and blueberries. Drizzle with balsamic vinegar and honey/maple syrup; toss gently.
- Add the grilled peaches on top of the salad.
- Serve immediately with extra balsamic vinegar drizzled on top if desired.
