Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the onion until translucent (about 5 minutes). Add spinach and cook until wilted. Set aside.
- In a large bowl, whisk together eggs, cottage cheese, milk, salt, and pepper until well combined.
- Fold in the sautéed spinach and onions along with cheddar cheese.
- Pour the mixture into a greased pie dish, spreading it evenly.
- Bake for 30-35 minutes or until set and golden on top. Allow cooling slightly before slicing into wedges.
