Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat softened butter and sugar until light and fluffy (about 3 minutes).
- Add eggs one at a time, mixing well after each addition, then gently fold in mascarpone.
- In another bowl, whisk together flour, coffee granules, cocoa powder, and baking powder. Gradually mix into wet ingredients until just combined.
- Scoop rounded balls of dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 12-15 minutes or until edges are lightly golden. Cool on sheets for 5 minutes before transferring to wire racks to cool completely.
