  • 1 tablespoon soy sauce
  • 1/4 cup cooking sake (or rice vinegar)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 inch ginger (peeled and coarsely diced)
  • 1/2 tablespoon sesame oil
  • 3 dashes black pepper powder
  • white sesame for garnish
  • 1 scallion (cut into strips) for garnish

Instructions

  1. Clean and pat dry chicken wings.
  2. In a mixing bowl, combine marinade ingredients (soy sauce, sake, sesame oil, ginger, black pepper) and add wings. Marinate for at least 30 minutes.
  3. Preheat oven to 400°F (207°C).
  4. Prepare the glaze by heating honey, soy sauce, and mirin in a saucepan until thickened.
  5. Place marinated wings on a baking sheet lined with parchment paper and bake for 10 minutes.
  6. Brush half of the glaze on wings; bake another 10 minutes.
  7. Apply remaining glaze and bake for an additional 10-12 minutes until golden brown.
