- 2 cups whole milk
- 2 cups heavy cream
- 1 cup unsweetened cocoa powder
- 2 ounces semi-sweet chocolate
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 5 large egg yolks
Instructions
- In a large saucepan, whisk together whole milk, heavy cream, and cocoa powder. Heat over medium-low until simmering. Remove from heat, then stir in chopped chocolate and vanilla until melted.
- Add 3/4 cup of sugar to the mixture; return to simmer while whisking until dissolved.
- In a separate bowl, whisk remaining sugar with egg yolks until thickened. Gradually mix in warm chocolate mixture.
- Return to saucepan and cook over medium heat until thick enough to coat a spoon. Strain into a bowl set in an ice bath to cool quickly.
- Chill custard completely in the refrigerator (about an hour or overnight).
- Pour chilled custard into an ice cream maker; churn according to manufacturer's instructions until soft serve consistency is achieved. Transfer to an airtight container and freeze until firm.
