Ingredients
- 2 lbs ground beef
- 1 medium yellow onion, diced
- 1 can (15 oz) chili beans, undrained
- 1 can (46 oz) tomato juice
- 4 oz spaghetti or angel hair pasta, broken into thirds
- 1–2 Tbs. mild chili powder
- 1 Tbs. granulated sugar
- 1 tsp. kosher salt
- 1 tsp. pepper
- Optional garnishes: shredded cheddar cheese, corn chips, sour cream
Instructions
- Gather all ingredients and prepare by dicing the onion and breaking the spaghetti into thirds.
- In a large pot over medium heat, cook the ground beef until browned. Use a wooden spoon to break up clumps as it cooks.
- Add diced onion to the pot and sauté until translucent, about 5 minutes.
- Stir in chili powder, salt, pepper, chili beans (with liquid), tomato juice, and broken spaghetti; mix well.
- Bring to a gentle boil, then reduce heat and let simmer uncovered for about 30 minutes.
- Serve hot in bowls garnished with cheddar cheese, corn chips, and sour cream as desired.
