  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 cups unsalted butter (for frosting)
  • 3 cups powdered sugar
  • 1 cup unsweetened Dutch processed cocoa powder
  • 1/4 tsp coarse Kosher salt
  • 2 tsp vanilla extract or vanilla bean paste
  • 2 tbsp milk or cream
  • 12 oz chocolate candy melts
  • 12 tbsp solid coconut oil (if needed to thin the chocolate)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare round baking pans by greasing and flouring them.
  2. In a bowl, sift together cake flour, baking powder, salt, ginger, granulated sugar, and brown sugar.
  3. In another bowl, whisk eggs until frothy then add milk, vinegar, melted butter, vegetable oil, and vanilla extract.
  4. Combine wet ingredients with dry ingredients using an electric mixer until smooth.
  5. Bake for approximately 30 minutes until a toothpick inserted comes out clean; cool before frosting.
  6. For frosting, beat softened butter until creamy then gradually mix in powdered sugar and cocoa powder until combined.
