- 1 cup pumpkin puree

Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
- In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Stir well.
- Gradually add dry ingredients to wet mixture; mix gently until just combined.
- Fill muffin tin three-quarters full with batter.
- Bake for approximately 18 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
