- 9 pitted soft dates
- 2 cups old-fashioned oats
- ½ cup almond butter
- ¼ cup ground flaxseed
- 1 tsp ground cinnamon
- ¼ tsp salt
- 1 tablespoon maple syrup
- 2 cups yogurt (plain)
- 1 – 1½ cups frozen berries or fresh fruit
Instructions
- Prepare the berry layer by heating berries in a pan until syrupy; set aside to cool.
- In a food processor, blend dates until smooth. Add oats, almond butter, flaxseed, cinnamon, maple syrup, and salt; mix well.
- Press the mixture into a parchment-lined baking dish evenly.
- Pour yogurt over the oat base, then swirl in cooled berry syrup.
- Freeze for 3–4 hours until firm.
