Instructions
- Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
- Beat egg whites and cream of tartar in a bowl using an electric mixer until soft peaks form. Gradually add sugar and continue mixing until stiff peaks form.
- Pipe meringue onto the baking sheet into ghost shapes and bake for 2 hours; leave in the oven for an additional 30 minutes after turning it off.
- While meringues bake, prepare buttercream by mixing softened butter, confectioners' sugar, and milk until smooth. Add purple gel food coloring to desired shade.
- Frost cooled cupcakes with purple buttercream and top each with a meringue ghost decorated using black frosting.
