- 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
- 5 black olives (whole pitted, medium or large)
- ½ Pound chicken (sliced thinly)
- ¼ Cup olive oil
- 1 ½ Ounces balsamic glaze
- 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
- 8 basil leaves (fresh)
- kosher or table salt (as needed)
- flake salt (as needed)
Instructions
- In a mixing bowl, combine olive oil and finely chopped fresh basil. Season with salt to taste.
- Slice each mozzarella ball in half horizontally. Place one half on a serving platter.
- Cut black olives in half; place one half on each mozzarella piece for the 'pupil.'
- Wrap a slice of chicken around the mozzarella for added flair.
- Drizzle with balsamic glaze and scatter sun-dried tomatoes around for decoration.
- Chill for 15 minutes before serving.
