  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • 8 basil leaves (fresh)
  • kosher or table salt (as needed)
  • flake salt (as needed)

Instructions

  1. In a mixing bowl, combine olive oil and finely chopped fresh basil. Season with salt to taste.
  2. Slice each mozzarella ball in half horizontally. Place one half on a serving platter.
  3. Cut black olives in half; place one half on each mozzarella piece for the 'pupil.'
  4. Wrap a slice of chicken around the mozzarella for added flair.
  5. Drizzle with balsamic glaze and scatter sun-dried tomatoes around for decoration.
