- 1 1/2 California avocados
- 1 large peach (slightly underripe)
- 4 (6 oz.) mahi mahi fillets
- Olive oil spray
- Juice of 1 small lime
- 1 tablespoon minced jalapeno pepper
- 1/4 teaspoon kosher salt
- 1 tablespoon minced cilantro
- 2 teaspoons paprika
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 3/4 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Dice avocados and peach; mix with jalapeno, half lime juice, salt, and cilantro in a bowl for the salsa.
- In another bowl, combine spices and rub evenly over both sides of the mahi mahi fillets.
- Preheat grill or grill pan over medium-high heat; spray lightly with olive oil.
- Grill mahi mahi for about 3–4 minutes per side until flaky.
- Serve topped with avocado peach salsa.
