Ingredients
- 1½ pounds boneless skinless chicken breasts
- ¼ cup oil
- 1 cup barbecue sauce
- 1 (15-ounce) can pineapple slices
- Pineapple juice from the can
- 2 teaspoons soy sauce
- 1 teaspoon minced garlic
- Chopped fresh cilantro for garnish
Instructions
- Marinate chicken in a resealable bag with oil and half of a mixed marinade made from barbecue sauce, pineapple juice, soy sauce, and garlic. Chill for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-8 minutes on each side until cooked through (165°F internal temperature).
- Grill pineapple slices for 2-3 minutes until warmed and slightly charred.
- Brush grilled chicken with reserved barbecue sauce and garnish with cilantro before serving.
