Ingredients
- 4 boneless skinless chicken breasts
- 1 cup BBQ sauce
- 1 (15 ounce) can pineapple slices (including juice)
- 2 teaspoons soy sauce
- 1 teaspoon garlic
- 1 red bell pepper (cut into cubes)
- 2 medium zucchini (sliced)
- Green onions (for garnish)
Instructions
- Preheat your grill to medium heat. Cut four large sheets of heavy-duty foil.
- Place one chicken breast in the center of each foil sheet, then distribute the red bell pepper, zucchini, and pineapple slices among the packets.
- In a mixing bowl, whisk together BBQ sauce, pineapple juice, soy sauce, and garlic. Spoon about 2 tablespoons over each chicken breast; reserve 1/4 cup for later.
- Seal each foil packet tightly and grill for 13-15 minutes, flipping halfway through until fully cooked.
- Carefully open each packet to avoid steam burns. Baste with reserved sauce and garnish with green onions before serving.
