- 1 large piece of flank steak (up to 3 pounds)
- 1/3 cup fresh lime juice
- 1/4 cup olive oil
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp soy sauce
- 1/2 tsp ground chipotle chile powder
- Optional: 2 tsp lime zest
- For garnish: 2 tbsp fresh parsley, chopped
Instructions
- Combine all marinade ingredients in a bowl until well mixed.
- Place flank steak in a Ziploc bag and pour marinade over it. Seal tightly and refrigerate for at least 8 hours, preferably overnight.
- Preheat the grill to medium-high heat after removing the steak from the fridge about 30 minutes prior.
- Oil the grill grates using a paper towel dipped in olive oil.
- Grill the steak for about 4-6 minutes per side depending on desired doneness (aim for internal temperature of 140-145°F for medium rare).
- Remove from grill, let rest for five minutes, then slice across the grain and serve with lime wedges.
