  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder
  • Optional: 2 tsp lime zest
  • For garnish: 2 tbsp fresh parsley, chopped

Instructions

  1. Combine all marinade ingredients in a bowl until well mixed.
  2. Place flank steak in a Ziploc bag and pour marinade over it. Seal tightly and refrigerate for at least 8 hours, preferably overnight.
  3. Preheat the grill to medium-high heat after removing the steak from the fridge about 30 minutes prior.
  4. Oil the grill grates using a paper towel dipped in olive oil.
  5. Grill the steak for about 4-6 minutes per side depending on desired doneness (aim for internal temperature of 140-145°F for medium rare).
  6. Remove from grill, let rest for five minutes, then slice across the grain and serve with lime wedges.
