- 1 lb sirloin steak (or steak tips), cut into bite-sized pieces
- 1 package (20 oz) cheese tortellini, fresh or refrigerated
- 2 cups milk (whole or 2%)
- 1 cup beef broth
- 2 cups shredded sharp cheddar cheese
- ½ cup shredded mozzarella for topping
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 2 tbsp butter
- 1 tbsp all-purpose flour
- Salt & black pepper, to taste
- 1 tsp Dijon mustard (optional)
- 1 tsp paprika
Instructions
- Preheat your oven to 375°F (190°C). Season sirloin pieces with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and sear the steak until browned (about 2-3 minutes per side). Remove from heat.
- In the same skillet, melt butter and sauté garlic until fragrant. Stir in flour to form a roux; gradually whisk in milk and beef broth until smooth.
- Add cheddar cheese and stir until creamy.
- Cook tortellini according to package directions but slightly undercook them. Drain and toss with olive oil.
- In a greased baking dish, combine tortellini, seared steak, and cheese sauce. Mix gently. Top with shredded mozzarella.
- Bake uncovered for about 20-25 minutes until bubbly and golden brown.
